The Good Food (II) Yum Yum Yum: What to cook this week?

Seen some good dishes that could be useful for those long days after work.

How about some home made burrito bowls?




INGREDIENTS
2-3 boneless skinless chicken breasts
BBQ seasoning (or taco seasoning sometime) 
3 bell peppers, any color, sliced
1 large red onion, sliced
2 tablespoons olive oil
1 jar salsa
3 cups cooked brown rice, divided
1 can black beans, drained and rinsed (or refried beans sometime)
1 can corn
1 cup shredded cheddar cheese
1 lime, sliced into wedges

How to cook?

Dude, chop up tonnes of peppers and red onion and cook it with chicken strips, rice can be boiled en masse on the side. Maybe all the chicken should be cooked en masse too.... Perfect!


The best part is, if I made this on a Wednesday day time I could store it for Thursday-Saturday day shifts! Awesome brah!
